Blackberry Lemon Thyme Muffins

  • 2 packets Pancake & Baking Mix or 1 packet each Pancake/Baking Mix and vanilla Health One
  • 1 egg white
  • 1 teaspoon thyme (finely chopped)
  • 1/2 cup blackberries (cut in halves or quarters)
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon juice
  • 2 teaspoons lemon zest
  • 1/4 cup water
  1. Preheat oven to 350 degrees. Combine all ingredients and spoon into medium muffin tins. Bake for about 18 minutes.
