Blackberry Lemon Thyme Muffins
- 2 packets Pancake & Baking Mix or 1 packet each Pancake/Baking Mix and vanilla Health One
- 1 egg white
- 1 teaspoon thyme (finely chopped)
- 1/2 cup blackberries (cut in halves or quarters)
- 2 teaspoons vanilla extract
- 1 tablespoon lemon juice
- 2 teaspoons lemon zest
- 1/4 cup water

Preheat oven to 350 degrees. Combine all ingredients and spoon into medium muffin tins. Bake for about 18 minutes.
