Blueberry Lemon Thyme Muffins

  • 2 packets Pancake/Baking Mix or 1 packet each Pancake/Baking Mix and 1 packet vanilla Health One
  • 1 egg white
  • 1 teaspoon thyme (finely chopped)
  • 1/2 cup blueberries
  • 2 teaspoons almond extract
  • 2 teaspoons lemon zest
  1. Preheat oven to 350 degrees. Combine all ingredients and spoon into medium muffin tins. Bake for about 18 minutes.
