Ingredients

  • 2 packets Pancake/Baking Mix Health One
  • 2 tablespoons cornmean
  • 1/2 cup water OR 1/4 cup water and 1/4 cup buttermilk

Instructions

  • Preheat oven to 350 degrees. Combine all ingredients. Place is small loaf pan. Bake for about 25 minutes.
    Calories: MR = 160, Extras = 50 , Total = 210cals per MR Serving
    Fat-free buttermilk will add 22 additional calories.

  • 1/4 cup banana mashed
  • 1 teaspoon walnut extract or walnuts
  • 1 teaspoon banana extract
  • 1/2 cup water

Instructions

  • Preheat oven to 350 degrees. Combine all ingredients. Place in small loaf pan. Bake for about 25 minutes. 
    Calories: MR = 160, Extras = 60, Total = 220 cals per MR Serving
    Using ½ Tbsp coarsely chopped walnuts will add 20 calories.  

Zuccini Bread

Ingredients

  • 3 packets vanilla Health One
  • 1 packet Pancake/Baking Mix
  • 1 cup zucchini shredded
  • 1/2 cup pineapple crushed with juice
  • 1/2 teaspoon nutmet
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 3/4 cup water, more or less

Instructions

  • Mix all ingredients together. Place in a regular bread loaf pan and bake at 350 degrees for 40-45 minutes.
    Calories: MR = 160, Extras = 12, Total = 172 cals per MR Serving
