Ingredients

  • 1 packet Pancake/Baking Mix Health One
  • 1/4 cup pumpkin
  • 7 pecans or walnuts chopped
  • 1 teaspoon pumpkin spice
  • 1 teaspoon vanilla
  • 2 tablespoons water

Instructions

  • Preheat oven to 350 degrees. Combine all ingredients. Place in small loaf pan. Bake for about 25 minutes.

    Save 25 calories by using pecan or walnut extract instead of the nuts.

Ingredients

  • 1 packet Pancake/Baking Mix Health One
  • 1 tablespoon Monterey Jack Cheese shredded
  • 1/4 zucchini shredded
  • 1/2 teaspoon garlic chopped
  • 2 teaspoon onion chopped
  • 1/4-1/2 cup water for desired thickness

Tomato Sauce

  • 1/2 cup tomatoes chopped
  • 1 teaspoon onion chopped
  • 1 teaspoon basil chopped
  • 1/2 teaspoon garlic chopped
  • 1/2 teaspoon olive oil
  • salt and pepper to taste
  • dash Balsamic vineger

Instructions

  • Mix all ingredients together. Pour onto non-stick pan. Cook for 2 minutes. Flip and cook for another 2 minutes. Serve and top with tomato sauce (adds 36 extra calories).

  • 1/4 cup water

  • 1/4 cup blueberries

Instructions

  • Preheat oven to 350 degrees. In a small bowl, add pancake mix Health One, vanilla and water in a bowl. Mix and flatten dough on baking sheet, sprayed with baking spray. Bake for 10 minutes. Remove from oven. Let cool. Spread cream cheese on pie. Add strawberries and blueberries.
