Ingredients

  • 2 packets Pancake/Baking Mix or 1 each of Pancake/Baking Mix and 1 vanilla Health One
  • 1 tablespoon dried cranberries chopped
  • 1 tablespoon oatmeal
  • 7 pecans or walnuts chopped
  • 2 teaspoons pecan extract
  • 2 teaspoons orange extract
  • 2 teaspoons orange zest
  • 1/3 cup water

Instructions

  • Preheat oven to 350 degrees. Combine all ingredients. Place is small loaf pan. Bake for about 25 minutes.
    Calories: MR = 160, Extras = 50, Total = 210 cals per MR Serving.
    Note: Save 45 calories by using pecan or walnut extract instead of the nuts.

Ingredients

  • 1 packet chocolate Health One
  • 1 packet Pancake and Baking Mix
  • 3 tablespoons Truvia
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmet
  • 3/4 cup ripe banana mashed
  • 2 tablespoons cocao nibs
  • 1 tablespoon PB 2

Instructions

  • Mix dry ingredients and then fold in bananas, PB2 and cacao nibs. Using a 12-cup metal muffin pan or a mini-muffin pan, spray with cooking spray and then distribute batter evenly into muffin pan. Bake for 20 minutes at 350 degrees. Usually makes 12 muffins.

  • 1/4 cup carrot finely diced
  • 1 teaspoon nutmet
  • 1 teaspoon walnut extract
  • 1/2 cup water

Instructions

  • Preheat oven to 350 degrees. Combine all ingredients and spoon into muffin tins. Bake for 15-20 minutes depending on size of muffin tin.

Vanilla: BANANA WAFFLES

Ingredients

  • 1 packet vanilla HEALTH ONE 160 calories
  • 1 Tbsp sugar-free banana pudding 15 calories
  • 1/4 cup water

Instructions

  • Mix all ingredients together. It should have a batter consistency. Spray waffle iron very well with non-stick cooking spray. Follow waffle iron instructions.
    Calories per serving: 175 calories
    Health One waffle variation(s): Substitute 1 Tbsp sugar-free banana pudding for any 1 Tbsp of sugar-free pudding mix (15 calories). Or, omit 1 Tbsp sugar-free pudding and replace with 1 Tbsp dry baking mix, such as Martha White Muffin Mix or any variety of Jiffy Muffin Mix for 40 calories per Tbsp.
