Ingredients

  • 1 packet Potato Soup Health One
  • 2 cups broth
  • 3 tablespoons yellow curry powder
  • 1 teaspoon fresh ginger - minced, or dry powder
  • 2 tablespoons non-fat Greek yogurt
  • 1 tablespoon yellow raisins
  • 1/2 cup lentils cooked or canned

Instructions

  • Whisk together liquid ingredients and spices into saucepan. Heat over medium heat to thicken. Add vegetables, raisins and lentil. Delicious and hearty! Perfect on a cold winter day.

    Calories are higher with this recipe but the lentils can be counted as a high-starch vegetable for the day. The lentils account for 115 calories.

Ingredients

  • 1 packet Potato Soup Health One
  • 1 cup broth (Mexican flavored if possible)
  • 1/2 cup diced tomatoes with zesty mild green chiles
  • 1/2 teaspoon McCormick Perfect Pinch Mexican

Instructions

  • Combine all ingredients except potato soup Health One. Cook on stovetop until mixture is heated slowly. Then add packets of Health One, stirring constantly with wire whisk. Cook until desired consistency is reached. It may be desirable to add extra broth for a thinner soup. Tasty and spicy.

Ingredients

  • 1 packet Potato Soup Health One
  • 1/2 cup fresh mushrooms sliced
  • 1 teaspoon extra virgin olive oil
  • 1/2 teaspoon onion powder
  • 1 cup water or fat-free broth

Instructions

  • In a small sauce pan, heat the olive oil. Add the sliced mushrooms and saut√© for a few minutes. Add the water or broth and onion powder. Simmer the mushrooms in the liquid for 5-7 minutes. Slowly, stir in the potato soup Health One until well-blended. Soup will be thick. For a thinner soup, add more broth. Remove from heat immediately.
