- 2 packets Pancake/Baking Mix Health One
- 1/4 cup buttermilk
- 1 teaspoon ground pepper
- 2 tablespoons corn (frozen or canned, drained)
- 1/4 cup red pepper (diced)
- 1 tablespoon basil (chopped finely)
- 1 tablespoon scallions (chopped)
- 1/2 cup water

Preheat oven to 350 degrees. Combine all ingredients into muffin tins. Bake for 18 minutes.
