Corn Muffins with Sweet Red Pepper

  • 2 packets Pancake/Baking Mix Health One
  • 1/4 cup buttermilk
  • 1 teaspoon ground pepper
  • 2 tablespoons corn (frozen or canned, drained)
  • 1/4 cup red pepper (diced)
  • 1 tablespoon basil (chopped finely)
  • 1 tablespoon scallions (chopped)
  • 1/2 cup water
  1. Preheat oven to 350 degrees. Combine all ingredients into muffin tins. Bake for 18 minutes.
