Pumpkin Mousse Cups

  • 2 packets Vanilla Health One
  • 1 packet Pancake/Baking Mix Health One
  • 1/2 tablespoon vanilla
  • 1/4 cup pumpkin puree
  • 1 tablespoon pumpkin pie spice
  • 1/2 tablespoon ginger (fresh or dry)
  • 1/2 cup water plus 2 tablespoons more water
  1. Mix all ingredients together. Add enough water to make a cake batter consistency. Place paper cups sprayed with cooking spray in cupcake tin. Fill in 12 cups. Bake at 325 degrees for 12-15 min. Do not overbake. Varies by oven. Freeze unused cupcakes. Microwave or just defrost as needed.
