Tuscan Muffins

  • 2 packets Pancake/Baking Mix Health One
  • 2 tablespoons sun-dried tomatoes (chopped)
  • 2 teaspoons fresh basil – chopped, or 1 tsp dried
  • 2 teaspoons Italian seasoning
  • 2 teaspoons Romano or parmesan cheese (grated)
  • 1/2 cup water
  1. Preheat oven to 350 degrees. Mix all ingredients together. Using baking spray, spray a mini-muffin pan. Spoon the batter in the muffin pan. Makes about 10 mini-muffins. Bake for 15 min. Can be refrigerated or frozen.
