Yellow Curry Simmer

  • 1 packet Potato Soup Health One
  • 2 cups broth
  • 3 tablespoons yellow curry powder
  • 1 teaspoon fresh ginger – minced, or dry powder
  • 2 tablespoons non-fat Greek yogurt
  • 1 tablespoon yellow raisins
  • 1/2 cup lentils (cooked or canned)
  1. Whisk together liquid ingredients and spices into saucepan. Heat over medium heat to thicken. Add vegetables, raisins and lentil. Delicious and hearty! Perfect on a cold winter day.

    Calories are higher with this recipe but the lentils can be counted as a high-starch vegetable for the day. The lentils account for 115 calories.
