Zucchini Pineapple Muffins

  • 1 packet Pancake/Baking Mix Health One
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 tablespoons zucchini (finely shredded)
  • 2 tablespoons pineapple (crushed, drained)
  • 1/4 cup water
  1. Preheat oven to 350 degrees. Combine all ingredients and spoon into muffin tins.

    Bake for 20 minutes.
