- 2 servings of Potato Health One
- 2 tablespoons taco seasoning
- 2 tablespoons cornmeal
- 4-6 tablespoons water
- 1 cup fat-free refried beans
- 4 tablespoons salsa
- 4 tablespoons chopped jalapenos
- 1 cup chopped lettuce
- 1 tomato (chopped)
- 1/2 cup onion (chopped)
- 1/2 cup 2% fat cheese (shredded)
1. Mix Potato Health One, taco seasoning, and cornmeal with water. Roll a ball of dough on a pizza stone coated with cooking spray. Bake at 350 degrees for 8-10 minutes. Take it out of the oven and add refried beans, jalapenos, and salsa. Bake 5 more minutes. Then top with lettuce, tomato, onion, and cheese. Divide the tostada in half to make 2 servings.
