- 1 cup broth
- 1/3 cup lite coconut milk
- 1 tablespoon non-fat Greek yogurt
- 1 tablespoon curry powder
- 1 teaspoon fresh garlic – minced, or dry
- 2 cups spinach (cooked and chopped)
- 1 tablespoon fat-free cottage cheese
- Sea salt to taste

In a medium saucepan, whisk together ingredients except for spinach and cottage cheese. Cook on medium heat, almost to a boil. Add spinach and cottage cheese. The mixture should be thick and creamy.
