Chocolate Carrot Cups
Ingredients:

- 1 packet Pancake/Baking Mix Health One
- 1 packet Chocolate Health One
- 1/4 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/8 teaspoon ginger
- 2 teaspoons vanilla extract
- 1/2 cup carrot (finely shredded)
- 2 teaspoons walnuts (chopped)
- 1/2 cut water
- 6 teaspoons light cream cheese (optional)

Preheat oven to 350°. In a mixing bowl combine all ingredients except cream cheese until incorporated. Ladle batter into non-stick cupcake pan. Bake 15 minutes. Makes 6 cupcakes. Serve with cream cheese on top if desired.
HNT note: This recipe is also delicious with vanilla as the second packet. You can add vanilla or other extract plus a little no calorie sweetener to the cream cheese to make the “frosting” really pop.
