Spinach and Tomato Muffins

Ingredients

  • 2 packets Pancake/Baking Mix Health One
  • 1 egg white
  • 1 teaspoon garlic (finely diced)
  • 2 tablespoons goat cheese
  • 2 tablespoons sun-dried tomatoes
  • 1/4 cup fresh spinach – chopped, or 1/4 cup frozen – thawed and drained
  • 1 tablespoon scallions (chopped)
  • 1/2 cup water
  1. Preheat oven to 350 degrees. Combine all ingredients and spoon into muffin tins. Bake 15-20 minutes depending on size of muffin tins.
