Coconut Strawberry Bars

  • 2 packets Pancake/Baking Mix Health One
  • 1 tablespoon oats
  • 1 tablespoon unsweetened coconut
  • 2 tablespoons dried strawberries (20 gm weight) (chopped)
  • 2 teaspoons almond extract
  • 1/2 cup water plus 2 more tablespoons
  1. Preheat oven to 350 degrees. Mix all ingredients together. Using baking spray, spray 2 mini-loaf pans. Divide the batter into the 2 pans. Bake for 15 min. Can be refrigerated or frozen.
