  • 2 packets Pancake/Baking Mix or 1 each of Pancake/Baking Mix and 1 vanilla Health One
  • 1 tablespoon dried cranberries chopped
  • 1 tablespoon oatmeal
  • 7 pecans or walnuts chopped
  • 2 teaspoons pecan extract
  • 2 teaspoons orange extract
  • 2 teaspoons orange zest
  • 1/3 cup water


  • Preheat oven to 350 degrees. Combine all ingredients. Place is small loaf pan. Bake for about 25 minutes.
    Calories: MR = 160, Extras = 50, Total = 210 cals per MR Serving.
    Note: Save 45 calories by using pecan or walnut extract instead of the nuts.
